Fish Steaks in Portuguese Sauce

This recipe is from Elsie B. Silva of San Diego, California. Ms. Silva’s grandmother, Maria Freitas brought the recipe to America from Azores Islands, Portugal.


Fish Steaks in Portuguese Sauce

1 tbsp. oil
2 onions
1/2 cup green pepper, all chopped
1/4 cup celery
2 tbsp. parsley
2 cloves garlic
4 halibut steaks or any white, firm-fleshed fish
1 (15 oz.) can tomato sauce
salt & pepper, to taste
bay leaf
1/2 tsp. cumin
1 (3") piece orange peel

 

  1. Sauté all vegetables in oil until golden.

  2. Add more oil if necessary.

  3. Add tomato sauce, 1/2 can (sauce can) of water, salt & pepper to taste, cumin, bay leaf and orange peel.

  4. Simmer 10 minutes.

  5. Poach fish steaks in sauce until fish flakes easily with a fork (about 10-15 minutes).

  6. While fish is cooking spoon sauce over steaks so top is cooked evenly.

  7. Discard orange peel and bay leaf.

  8. Serve with potatoes sprinkled with dill weed and butter, green salad, and Italian or French bread.
