Red Cabbage

Today we’re sharing a recipe from The Ellis Island Immigrant Cookbook for Red Cabbage. This recipe from Mary V. Lee of Deer Park, New York was handed down to her by her Irish great-grandmother.

Red Cabbage

1 whole cabbage, cored and shredded 
1 tsp. salt 
1 medium apple, peeled, cored and sliced 
1 sprinkle sugar 
1 small onion, sliced
2 strips of bacon 
1 tsp. vinegar 
1 cup water 
5 ginger snaps, crumbled

 

  1. In a large pot, put in bacon and cook until crispy.

  2. Add onion and sauté until soft.

  3. Remove bacon and drain, put aside.

  4. Put cabbage in pot and the rest of ingredients except ginger snaps.

  5. Bring to a boil and let simmer until cabbage is just about done.

  6. Add ginger snaps and cook until done.

  7. Sprinkle bacon on just before serving.  

 *Household Hint: Put one tbsp. of cream of tartar in with cabbage. It will release the acid in cabbage. For people who have trouble eating cabbage, it will help.
