Meatball Soup

This recipe from The Ellis Island Immigrant Cookbook comes from Deana Solomon of Flushing, Michigan. Deana’s mother and brother came to America by way of Ellis Island in December 1916 from Turkey. Deana’s father had arrived on Ellis Island from Turkey in 1912.

Meatball Soup

1 lb. ground beef
1 cup green onions, finely chopped
1 cup (fine) cracked wheat
1/2 tsp. salt
1/2 tsp. black pepper
2 tbsp. oil

  1. In 3-quart pot, brown 1/2 green onions with 2 tbsp. oil. Then add 2 quarts water, salt & pepper and bring to a boil. Then add 1/2 cup cracked wheat.

  2. In large bowl mix together: 1 lb. ground beef, 1/2 cup green onions, 1/2 cup cracked wheat. Make into 2 inch meatballs. Drop into pot, bring to a boil again, then lower heat to medium and cover and cook for about 45 minutes. Serves about 5.
